Can metadata be edited or removed?

Yes — most fields can be edited from Word's File → Info pane. Uvelia is read-only; it shows you what's there, it doesn't modify it.

Why is the page count off by one or two?

Word stores the page count from the last save. If the document has been edited since, the actual page count may differ until it's re-saved.
